Executive Board of Directors

“When I learned about Food for Days, I knew I was meant to be a part of it.”

Six years ago, I became involved in Food for Days after reading an inspiring article about our founder, John Saunders. After serving on our Advisory and Executive Boards, I am currently President of our Executive Board.

Prior to moving to North Carolina, I worked in finance for 15 years in New York City. My husband, Jack, and I are the proud parents of three active teenagers, Maddie, Connor and Ally.

In my spare time, I enjoy tennis, hiking and reading.

Karen has a background in education and over 10 years experience working in nonprofit work.

She started working with Food For Days as Executive Administrator in December 2013 and became Director in March 2015.

“While collecting food from one of our collection sites a gentleman approached me and shared that his two girls were two of the first 10 to receive weekend meal bags at a very difficult time in his life. He was so appreciative.”

John was the man through which Christ led to begin this ministry along with other Christ followers at First Baptist Church of Mooresville, NC.

Hearts were caught with:

“Did you know…
local kids are returning to school on Monday with bellyaches because they haven’t eaten since Friday?”

Through John, repeated weekend child hunger could not go unaddressed. So the ministry went from one school to every school within the Mooresville Graded system being served in just six years or so.
